Ingredients:

  • 1 cup thin coconut milk
  • 1/2 cup thick coconut milk

  • 2 green chillies, slit
  • 1 tbsp ginger, finely chopped
  • 1 tbsp garlic, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp cumin powder
  • 2 tbsp coconut oil
  • Curry leaves
  • Salt to taste

Instructions:

  1. Clean and cut the fish into medium-sized pieces.

  2. In a pan, heat coconut oil over medium heat. Add sliced onions, ginger, garlic, and green chillies. Saute until the onions turn translucent.

  3. Add turmeric powder, coriander powder, cumin powder, and garam masala. Mix well and saute for a minute.

  4. Add chopped tomatoes and cook until they turn soft and mushy.

  5. Add thin coconut milk and curry leaves. Bring it to a boil and let it simmer for 5 minutes.

  6. Add the fish pieces and salt to taste. Simmer for another 5-7 minutes until the fish is cooked through.

  7. Add thick coconut milk and gently stir. Cook for another 2-3 minutes.

  8. Turn off the heat and garnish with fresh curry leaves.
